Aşure, Türk mutfağındaki diğer birçok tatlıdan farklıdır.
Çünkü tek bir malzemenin hikâyesini anlatmaz.
Birçok malzemenin bir araya gelmesini anlatır.
Buğday.
Bakliyatlar.
Meyveler.
Elde kalan her şey aynı kazanda pişirilir.
Nohut.
Fasulye.
Kuru üzüm.
Kayısı.
İncir.
Ceviz.
Nar.
Her evin tarifi farklı olabilir.
Aşure is different from many other desserts in Turkish cuisine.
Because it does not tell the story of a single ingredient.
It tells the story of many ingredients coming together.
Wheat.
Legumes.
Fruits.
Nuts.
And sugar.
Products completely different from each other meet in the same pot.
And they finally turn into a single dessert.
The Noah’s Ark narrative
The most well-known story about aşure is based on Noah’s Ark.
According to the legend, after the great flood, the remaining provisions on the ship were brought together.
Everything left was cooked in the same pot.
Aşure emerged.
This story has given aşure not only a gastronomic but also a cultural and symbolic meaning.
Different ingredients.
One pot.
Living together.
Sharing.
Legend and tradition
There is no historical evidence that aşure was made in its present form on Noah’s Ark.
This story is more of a narrative living within cultural and religious tradition.
Yet the idea it represents is truly at the center of aşure culture:
Sharing.
Coming together.
And different things meeting at the same table.
Muharrem and the aşure tradition
In Turkey, aşure is prepared especially in the month of Muharrem and shared with neighbors.
Aşure made in one house is not prepared only for that house.
It is put into bowls.
Taken to neighbors.
Shared with relatives.
Therefore, aşure is more a social tradition than a dessert.
Different flavors in the same pot
The gastronomic power of aşure lies in the diversity of its ingredients.
Products that seem unrelated on their own meet in the same dessert.
Wheat.
Chickpeas.
Beans.
Raisins.
Apricots.
Figs.
Walnuts.
Pomegranate.
The recipe of each home may be different.
In some homes one ingredient is used more.
In others another product stands out.
Yet no aşure is exactly the same as another.
Perhaps that is why aşure is a culinary memory passed from home to home.
Today
Aşure is still one of the most beloved and most shared desserts in Turkey.
Its story is not just sweetness, but unity.
